Summer Recipies - Mem's Carrot Soup with Ginger
Sooo tasty Mem! And thanks for the recipe!
One of those really hot evening last summer Mem prepared this Carrot Soup with Ginger, and we had it cold! But it is really nice in the wintertime, says Mem, when I serve it hot. As a meal on it's own with a nice bread or as a starter. The recipe serves 4 persons:
4 carrots
1 leek
1,2 liter vegetable stock
1 dl fresh cream
2 tbsp grounded fresh garlic
salt & pepper
1. Rinse and clean the leek, chop it.
2. Peel the carrots, slice them.
3. Put the vegetables in a pan and add the vegetable stock. Boil them tender (it takes 15 - 20 minutes, approximately).
4. Add the cream, put it all in a mixer and mix until smooth. Add the grounded ginger.
6. Put the soup back in the pan and bring to boil. Add salt & pepper to your taste. Garnish with parsley or chopped leek.
Serve hot or cold!
