Summer Recipe - Red Beetroot Salad Marilyn


Red beetroots, walnuts with French mustad dressing and endives! MMMM, says Pixi. And good for slimming! This is a recipe from one of the old restaurants in Hollywood where Marilyn Monroe and her filmstar pals used to go for lunch ...

Red Beetroot Salad MM

Endives
Red Beetroots
Walnuts
French mustard dressing - olive oil, white balsamic vinegar, French Dijon mustard, salt&pepper

1. Cook the beetroots in salted water until they are soft. Peel and cut them finely.
2. Cut the endives in finely - in "rings".
3. Chop the walnuts.
4. Mix all ingredients in a bowl. Add the dressing. Stir.
5. Put the salad in the fridge for at least 1 hour before serving to let the different tastes blend.
