Summer Recipes - Salade Niçoise
A classic from Nice, France. And Pixi's classic summer salad ...
Pixi's Salade Niçoise
Green salad
1 egg, hardboiled
2 small potatoes
1/4 tin of tuna fish (in water, not in oil)
1 chopped tomato
1/2 small red onion, chopped thin
3 anchovies, chopped
haricot verts, a handful slightly cooked
black olives, Kalamata
Salad dressing: olive oil, balsamic vinegar, French mustard, salt&pepper. Mixed by taste.
Put the ingredients on a plate, cut the egg in two, add the salad dressing.
This recipe is for 1 person, double it for 2 persons etc.
French baguette and a glass of cold beer is nice to the Salade Niçoise on a hot day, says Pixi. Although I wouldn't recommend it if you are on a diet!
